Hazelnut biscuits
Delicious crumbly biscuits from a traditional recipe
375 g flour
125 g wheat starch
250 g sugar
1 phial almond flavouring
1 pinch of salt
2 eggs
250 g butter
1 bag cake yeast
250 g granulated hazelnuts
Sieve flour and mix it with sugar, starch and a pinch of salt. Add butter softened outside the refrigerator. Add the other ingredients and work them well with your hands. Cover the dough with a cloth and let it rest in the refrigerator for 30 minutes. Then roll out the dough with the rolling-pin, cut the biscuits with the help of some little moulds, and put them in an oven at 185 °C for 10-12 minutes.
Orange pie
A light and savoury summer cake
250 g flour
250 g sugar
250 g butter
4 eggs
1 bag cake yeast
4 oranges
60 g icing sugar
Whip up sugar and butter. Add the egg-yolks, the sieved flour, the yeast and the orange juice. Finally whisk the egg whites until thick and add them to the dough. Put in an oven at 180 °C for 35 minutes.
