Our cooking philosophy
Our restaurant offers a cuisine in line with the whole “philosophy” of the hotel: adherence to tradition, absolute genuineness of food and considerable attention paid to flavours and the lightness of dishes.
We started up a gastronomic partnership at the beginning of 2010 with one of the best restaurants on the Island of Ischia: “Umberto a Mare 1937”. In fact we have more than one link with Marco and Umberto Regine: like us, they are constantly looking for genuine flavours and traditional recipes. They are also committed to the enhancement of the culture of good food and not only… because, just like the Aragonese Castle, “Umberto a mare” also often hosts vernissages, painting exhibitions and art events.
The taste of art and the art of taste
The Castle’s organic vegetable garden, the orchard and the vineyard are our “market place”. The Ischian fishermen who everyday sell their catch in Ischia Ponte, just below the Castle, are our official suppliers of fish and seafood. And for the rest: meat, oil, pasta and dairy products are all bought from the best Campania producers, because for us the thorough selection of foods is an unavoidable starting point.
You may have a full breakfast: hot drinks, fruit-juices, milk, yoghurts, cereals, bran, fresh fruits, cheese, sliced salami, bread and some excellent home-made cakes.
Then, on starry summer nights, the very few tables overlooking the sea far from the island noise and immersed in the Castle’s stillness will be the fantastic setting for your journey to discover Ischian flavours.
